Not everyone knows the unique and special flavor of freshwater fish. At Ristorante da Gino, we want to give you a unique and unforgettable culinary experience. We create each of our dishes with all the passion we've always put into our work, and with all the attention to detail typical of a family-run business. You will be able to try the Brustico grilled or the Tegamaccio, accompanied by a wide selection of potato or vegetable side dishes cooked in various ways. And since no dish can be fully enjoyed without the right wine, to enhance the flavors of your dishes you'll find a vast selection of fine local wines, specially designed to complement each specialty on our menu.
A fish with a long history: the brustico
The Ristorante Bar da Gino will surprise you with the unique flavour of brustico, a typical dish of some areas of Tuscany and Umbria.Brustico is a lake fish roasted over reed embers, which give it its characteristic smoky aroma. The "brustico" fish is served in small pieces, seasoned with raw extra virgin olive oil, a little vinegar, salt, and pepper.
This particular dish is eaten with the fingers, just like the Etruscans, who invented this exquisite recipe.
Tegamaccio, the fish soup from Lake Chiusi
The tegamaccio is a fish soup typical of Lake Chiusi and the more famous Trasimeno.
The tegamaccio is prepared in an earthenware pot by first cooking the fish heads with the sauce, then pureeing them and adding them back to the sauce with the fish and herbs. Once ready, the fish is served with slices of toasted homemade bread.
